What to Eat at Wolfgang Puck's Spago in Las Vegas

As the signature restaurant for Wolfgang Puck's culinary empire in Las Vegas, Spago has a long history and legacy in Las Vegas. It opened in 1992 at the Forum Shops at Caesars and kicked off a wave of celebrity chef-driven restaurants on the Strip. After switching locations, Spago can now be found at the Bellagio in a stunning space with views of the resort's iconic fountains. With an outdoor patio, modern decor and dramatic floor-to-ceiling windows, the restaurant feels bright and open. The menu has also been revamped as well. Here's a guide for what to order on your first visit to the new reimagined Spago.

Spicy Tuna Tartare
Served in sesame-miso cones, this appetizer may seem overly familiar these days, but Wolfgang Puck was one of the first to feature it at the original Spago. The mixture of pickled ginger, wasabi and bonito flakes helps give the fresh tuna a spicy crunch.

Salmon Pizza
This could be Wolfgang Puck's most recognizable signature dish. The pizza tastes fresh and vibrant with smoked salmon rounded out by the addition of salmon roe caviar, red onions and a dill creme fraiche. The pizza is cooked for about 10 minutes in a wood-fired oven.

Kampachi Crudo
An exclusive to the Las Vegas edition of Spago, the acidic crudo is balanced with pickled radish, yuzu and hibiscus ponzu. It's served with tapioca crisps and creamy avocado.

Wiener Schnitzel
Wolfgang Puck calls this his favorite dish at Spago. Veal is breaded scallopini-style, deep-fried and served with marinated cucumbers and a warm fingerling potato salad.

Crispy Skin Black Sea Bass
Simple yet so delicious. The Virginia black sea bass is sauteed until the skin is slightly crispy, then prepared with sweet pea puree, a bubbly citrus froth and a savory shallot confit on the side.

The Strawberry
No meal is complete without dessert. The Strawberry, another exclusive to the Las Vegas location, is prepared confit-style (cooked in its own juices) into a cube, garnished with basil and served over a salted almond streusel.
